Baked Egg in Avocado Basket
DESCRIPTION
An easy and healthy meal. Great for breakfast, lunch or dinner.
INGREDIENTS
Ingredients
- 1 avocado
- 1 teaspoon Olive oil
- 2 whole eggs
- 1 pinch Kosher salt
- 1 pinch paprika (and/or black pepper)
- lime zest (for serving)
INSTRUCTIONS
Preparation
- Halve an avocado and remove the pit.
- Create two small rings of aluminum foil so the avocado halves stay upright on cookie sheet.
- Brush with olive oil. Crack an egg into the center of the avocado. Sprinkle with salt and paprika.
- Broil for 5 minutes. Top with lime zest. Serve.
