Dark Chocolate Chickpea Brownies
DESCRIPTION
A great and healthy recipe, by Julia at theroastedroot, that makes great use of chickpeas, transforming them into a healthy chocolate brownie dessert.

- 1 14- ounce can chickpeas drained and rinsed
- 2 eggs
- ⅓ cup raw cacao powder
- ⅔ cup coconut sugar
- 2 tablespoons full-fat canned coconut milk or coconut oil
- 1 teaspoon coffee grinds*
- 2 teaspoons baking powder
- ½ cup dark chocolate chips

- Preheat the oven to 350 degrees F and line a 9" x 9" pan with parchement paper (or lightly oil it).
- Add all ingredients for the brownies to a blender and blend until completely smooth.
- Pour the brownie batter into the prepared baking pan and bake for 24 to 26 minutes or until brownies test clean.
- Allow brownies to cool at least 20 minutes before cutting and serving.
