in Garlic Dill Dressing
Cucumber and Radish Salad
DESCRIPTION
A refreshingly crisp and vibrant salad dressed in a creamy garlic and dill dressing.
INGREDIENTS
- 3 mini cucumbers (sliced)
- 8 oz radishes (about 10-15, sliced)
- 6 spring onions (sliced)
- 3 tablespoon mayonnaise ((or plain yogurt))
- 2 tablespoon lemon juice
- 1 clove garlic (minced)
- 3 tablespoon olive oil
- 1 teaspoon dill weed
- salt (to taste)
- black pepper (to taste)
INSTRUCTIONS
- Wash and thinly slice the cucumbers, radishes and spring onions. (Set aside 1 tablespoon of sliced spring onions to garnish salad.)
- In a bowl, combine the mayonnaise, lemon juice, minced garlic, olive oil, salt and pepper and mix until smooth and creamy.
- Add cucumbers, radishes and spring onions to the dressing and mix well.
- Plate and sprinkle with the remaining sliced spring onion.
