Roasted Carrots with Harissa and Honey
DESCRIPTION
A deep and rich caramelized flavor that's spicy (but not fiery). A great way to make carrots.
INGREDIENTS

- ¼ cup olive oil
- 2 tablespoon harissa paste
- 2 tablespoon honey
- 5 carrots (peeled and sliced)
- 1 pinch salt
INSTRUCTIONS
Instructions
- Preheat oven to 450°.
- In a bowl, combine oil, harissa, and honey and stir to mix well.
- Toss in carrot slices and coat.
- Lay carrots flat on a sheet of aluminum foil covered baking pan, then drizzle remaining harissa and honey over them.
- Roast carrots for about 40 minutes, turning once. They should start turning brown and be slightly tender.
- Remove from oven and sprinkle with salt.
