Roasted Carrots with Harissa and Honey
A deep and rich caramelized flavor that's spicy (but not fiery). A great way to make carrots.

harissa paste

honey

carrots
peeled and sliced

Preheat oven to 450°.
In a bowl, combine oil, harissa, and honey and stir to mix well.
Toss in carrot slices and coat.
Lay carrots flat on a sheet of aluminum foil covered baking pan, then drizzle remaining harissa and honey over them.
Roast carrots for about 40 minutes, turning once. They should start turning brown and be slightly tender.
Remove from oven and sprinkle with salt.
