Perla's Vegetable Soup
DESCRIPTION
A favorite and light soup which can be served as a first course or a stand alone meal. Add chicken for a heartier meal.
INGREDIENTS
- 2 quarts water
- ½ bunch cilantro (rinsed and minced)
- 3 large carrots
- 1 medium onion (Alternative: 1 large leek, sliced)
- 1 large potato
- ½ teaspoon turmeric
- 2 tbs oil
- 1 teaspoon salt
- 1 chicken leg or thigh (optional)
INSTRUCTIONS
- Bring 2 quarts of salted water to a boil. (Optional: if using chicken, add now and cook until tender, remove, and dice it when cooled.)
- Add the remaining ingredients (and chicken pieces) to the boiling water and cook for 5 to 10 minutes.
- Reduce heat to medium-low until the vegetables are tender 20-30 minutes. Serve warm. Salt and pepper to taste.
