Perla's Vegetable Soup
A favorite and light soup which can be served as a first course or a stand alone meal. Add chicken for a heartier meal.

Ingredients

water

bunch cilantro
rinsed and minced

Alternative: 1 large leek, sliced

Instructions
Bring 2 quarts of salted water to a boil. (Optional: if using chicken, add now and cook until tender, remove, and dice it when cooled.)
Add the remaining ingredients (and chicken pieces) to the boiling water and cook for 5 to 10 minutes.
Reduce heat to medium-low until the vegetables are tender 20-30 minutes. Serve warm. Salt and pepper to taste.
