Boiled Leek Salad with Mustard Vinagraitte
DESCRIPTION
INGREDIENTS
Leeks:
- 7 medium leeks
- 1 quart water (enough to cover leeks)
Vinaigrette:
- 1 ½ teaspoon mustard
- ¼ cup olive oil
- 1 juice of one lime
- 2 cloves garlic (crushed)
- 2 tablespoon parsley (chopped)
INSTRUCTIONS
- Bring water to boil in large pot.
- Cut the roots off each leek and soak in a bowl of water to remove any sand.
- Cook the leeks in boiling water for 15-20 minutes or until tender and drain.
- Cut leeks in 2 inch links and then slice strips length-wise.
- Blend all the vinaigrette ingredients and drizzle over the leeks. Serve warm or cold.
