Boiled Leek Salad with Mustard Vinagraitte

Ingredients
Leeks:

leeks

quart
water
enough to cover leeks
Vinaigrette:
1 1/2
tsp
mustard
1/4
cup
olive oil
1
juice of one lime
2
cloves
garlic
crushed
2
tbsp
parsley
chopped
Instructions
Bring water to boil in large pot.
Cut the roots off each leek and soak in a bowl of water to remove any sand.
Cook the leeks in boiling water for 15-20 minutes or until tender and drain.
Cut leeks in 2 inch links and then slice strips length-wise.
Blend all the vinaigrette ingredients and drizzle over the leeks. Serve warm or cold.
