Chickpea and Peanut Butter Chocolate Chip Cookies
Healthy, gluten-free and vegan, these cookies are delicious. No eggs, no sugar, and no flour.

Ingredients

canned chickpeas
rinsed and drained

tsp
vanilla extract
½
cup + 2 tbsp
peanut butter
¼
cup
honey

baking powder

chocolate chips

Instructions
Process all ingredients (except chocolate chips) in a food processor until smooth.
Mix in chocolate chips.
Preheat over to 350 degrees.
Wet hands and form balls. Flatten balls on a cookie sheet 2" apart.
Bake for 12 minutes. Remove from oven and let cool for 30 minutes before serving.
Store in container in refrigerator.
