DESCRIPTION

Healthy, gluten-free and vegan, these cookies are delicious. No eggs, no sugar, and no flour.

INGREDIENTS
 

  • cup canned chickpeas (rinsed and drained)
  • ½ tsp vanilla extract
  • ½ cup + 2 tbsp peanut butter
  • ¼ cup honey
  • ½ tsp baking powder
  • 8 ounces chocolate chips (optional)

INSTRUCTIONS
 

  • Process all ingredients (except chocolate chips) in a food processor until smooth.
  • Mix in chocolate chips.
  • Preheat over to 350 degrees.
  • Wet hands and form balls. Flatten balls on a cookie sheet 2″ apart.
  • Bake for 12 minutes. Remove from oven and let cool for 30 minutes before serving. 
  • Store in container in refrigerator.
