Vegetable Soup with Lettuce (Purim)

DESCRIPTION

INGREDIENTS
 

  • 2 quarts water
  • 1/4 cup cilantro (minced)
  • 1/4 cup parsley (minced)
  • 1 stalk celery (diced)
  • 1 head Romaine lettuce (shredded)
  • 4 carrots (peeled and cut into 1/2″ thick slices)
  • 1 bunch green onions
  • 12 ounces small lima beans (frozen or fresh)

INSTRUCTIONS
 

  • In large pot, bring water boil.
  • Add salt, cilantro, parsley, celery, onions, carrots & lima beans. Cook cover on medium heat until carrots become tender.
  • When ready to serve, place soup in bowl and sprinkle with shredded lettuce.
