Vegetable Soup with Lettuce (Purim)

Ingredients

water
1/4
cup
cilantro
minced
1/4
cup
parsley
minced

stalk celery
diced
1
head Romaine lettuce
shredded

carrots
peeled and cut into 1/2" thick slices
1
bunch green onions

ounces
small lima beans
frozen or fresh
Instructions
In large pot, bring water boil.
Add salt, cilantro, parsley, celery, onions, carrots & lima beans. Cook cover on medium heat until carrots become tender.
When ready to serve, place soup in bowl and sprinkle with shredded lettuce.
