Purim Vegetable Soup (Hada)
Vegetable Soup with Lettuce (Purim)
DESCRIPTION
INGREDIENTS
- 2 quarts water
- ¼ cup cilantro (minced)
- ¼ cup parsley (minced)
- 1 stalk celery (diced)
- 1 head Romaine lettuce (shredded)
- 4 carrots (peeled and cut into ½″ thick slices)
- 1 bunch green onions
- 12 ounces small lima beans (frozen or fresh)
INSTRUCTIONS
- In large pot, bring water boil.
- Add salt, cilantro, parsley, celery, onions, carrots & lima beans. Cook cover on medium heat until carrots become tender.
- When ready to serve, place soup in bowl and sprinkle with shredded lettuce.
