Perla's Chickpea and Spinach Soup
DESCRIPTION
INGREDIENTS
- 1 lb fresh spinach (rinsed thoroughly)
- 15 oz chickpeas (canned)
- 1 clove garlic (peeled)
- 3 sprigs cilantro (rinsed)
- ½ teaspoon cumin
- ½ teaspoon paprika
- 1 quart water
INSTRUCTIONS
- In a medium pot bring water boil to a boil the liquid.
- Strain chickpea liquid from can into the pot.
- Add in all the ingredients and boil for 5-7 minutes.
- *Optional version: Once slightly cooled, use immersion stick blender to blend into a smooth and silky soup.
