Roasted Carrots with Harissa and Honey

DESCRIPTION

A deep and rich caramelized flavor that's spicy (but not fiery). A great way to make carrots.

INGREDIENTS
 

Ingredients

  • ¼ cup olive oil
  • 2 tbsp harissa paste
  • 2 tbsp honey
  • 5 carrots (peeled and sliced)
  • 1 pinch salt

INSTRUCTIONS
 

Instructions

  • Preheat oven to 450°.
  • In a bowl, combine oil, harissa, and honey and stir to mix well.

  • Toss in carrot slices and coat.

  • Lay carrots flat on a sheet of aluminum foil covered baking pan, then drizzle remaining harissa and honey over them.

  • Roast carrots for about 40 minutes, turning once. They should start turning brown and be slightly tender.
  • Remove from oven and sprinkle with salt.
