Crustless Spinach Quiche is a twist on the traditional French tart. Quiche is made of pastry crust filled with a savory custard and pieces of cheese, meat, seafood or vegetables.

Quiche is served hot or cold. It is popular worldwide.

DESCRIPTION

Crustless Spinach Quiche is a twist on the traditional French tart. Quiche is made of pastry crust filled with a savory custard and pieces of cheese, meat, seafood or vegetables.

INGREDIENTS
 

  • ½ cup onion (chopped)
  • 10 ounces frozen chopped spinach (thawed and drained)
  • 6 eggs (beaten)
  • 3 cups low-fat Muenster cheese (shredded )
  • ¼ tsp salt
  • tsp black pepper

INSTRUCTIONS
 

  • Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 9 inch pie pan with vegetable spray. Bring large skillet to medium-heat. Add onions and cook, stirring occasionally, until onions are soft.
  • Stir in spinach and continue cooking until excess moisture has evaporated.
  • In a large bowl, combine eggs, cheese, salt and pepper. Add spinach mixture and stir to blend. Scoop into prepared pie pan.
  • Bake in preheated oven until eggs have set, about 30 minutes. Let cool for 10 minutes before serving.
