If you're in need of a quick yet hearty all-in-one meal that can feed a family, look no further than Arroz Con Salchichas. This Cuban-style Rice with Sausage dish is a mainstay of both Cuban and Puerto Rican cuisine. Typically made with Vienna sausage, we substitute it with soy-based sausage from Trader Joes.
Arroz Con Salchichas takes about 35-40 minutes to make and this recipe can feed up to 6 hungry people. Though this all-in-one meal is very satisfying on its own, I like to notch it up with sides of plantains and yucca fries. And sweet flan for dessert follows closely behind to wrap up this Latin meal.
Making Arroz Con Salchichas
Start by prepping all your ingredients. Dice the tomatoes, bell pepper and onion. If you don't have tomatoes, you can substitute them with 8 ounces of tomato sauce or canned diced tomatoes or even leftover salade cuite.
Then, sautee the ingredients in two tablespoons of olive oil. As they fry, slice the sausage, garlic and olives (optional). You can also rinse the rice at this time. I always prefer to rinse the rice thoroughly under cold water to remove the excess starch. It also helps prevent the rice from sticking together.
Once the vegetables are tender, add the sausage, garlic, olives, water, bouillon, turmeric powder and rice. Mix them all together and cover the saucepan with a tight fitting lid. Bring it to a boil, then lower to simmer for 30 minutes. The less water that evaporates, the better and the fluffier the rice will be. You
The smells are incredible through each stage. The olive oil, onions and pepper permeate the air as they sauté. A few minutes after the rest of the ingredients are added and the lid is sealed, family members seem to gravitate out of their rooms hover around the kitchen.
Once cooked, uncover the lid, and fluff the rice with a fork. Serve on a plate and garnish with chopped parsley. Side dish options include yucca fries, plantains, black beans, sautéed onions or a slice of crispy Cuban bread.

INGREDIENTS
- 2 cups rice, long grain (Basmati or Jasmine, rinsed)
- 3½ cups water
- 2 tablespoon bouillon, chicken
- 8 oz tomato sauce (or 6 roma tomatoes, diced)
- 1 tablespoon capers (optional)
- 10 green olives (optional)
- 1 lb sausages, sliced
- 1 bell pepper, red (diced)
- 1 onion (diced)
- 2 tablespoon olive oil (for cooking)
- ½ teaspoon turmeric powder (to color rice yellow)
- 3 cloves garlic, sliced
INSTRUCTIONS
- In a large saucepan, heat oil and add onions, bell pepper and tomatoes. Fry for 8-10 minutes until onions are transparent. Add garlic and fry for 2 more minutes.
- Rinse the rice. Add it to the pan with the sausage, capers, olives, rice, water, bouillon and turmeric. Mix and cover with tight lid. Bring to boil, then simmer for 30 minutes.
- Remove lid, fluff with fork and serve warm. Serve with plantains and yucca fries.
