Arroz Con Salchichas (Cuban-style Rice with Sausage)
Arroz Con Salchichas is a staple of both Cuban and Puerto Rican cuisines. The yellow rice and sausage pot is a filling and hearty dish. Accented with bell pepper, onions and garlic, some also add capers or green olives to it.

2cupsrice, long grainBasmati or Jasmine, rinsed
3½cupswater
2Tbspbouillon, chicken
8oztomato sauceor 6 roma tomatoes, diced
1Tbspcapers (optional)
10green olives (optional)
1lbsausages, sliced
1bell pepper, reddiced
1oniondiced
2Tbspolive oilfor cooking
½tspturmeric powderto color rice yellow
3clovesgarlic, sliced
Instructions
In a large saucepan, heat oil and add onions, bell pepper and tomatoes. Fry for 8-10 minutes until onions are transparent. Add garlic and fry for 2 more minutes.
Rinse the rice. Add it to the pan with the sausage, capers, olives, rice, water, bouillon and turmeric. Mix and cover with tight lid. Bring to boil, then simmer for 30 minutes.
Remove lid, fluff with fork and serve warm. Serve with plantains and yucca fries.
