Boiled Leek Salad with Mustard Vinagraitte

DESCRIPTION

INGREDIENTS
 

Leeks:

  • 7 medium leeks
  • 1 quart water (enough to cover leeks)

Vinaigrette:

  • 1 1/2 tsp mustard
  • 1/4 cup olive oil
  • 1 juice of one lime
  • 2 cloves garlic (crushed)
  • 2 tbsp parsley (chopped)

INSTRUCTIONS
 

  • Bring water to boil in large pot.
  • Cut the roots off each leek and soak in a bowl of water to remove any sand.
  • Cook the leeks in boiling water for 15-20 minutes or until tender and drain. 
  • Cut leeks in 2 inch links and then slice strips length-wise.
  • Blend all the vinaigrette ingredients and drizzle over the leeks.  Serve warm or cold.
