Honey and Butter Matzah “Sono Tono” for breakfast, a snack or dessert. It’s a sweet treat with a sweet name.

I love Passover, but after a few days of matzah, creative ideas are always welcome. Growing up in Morocco, Sono Tono was a treat my mom enjoyed during Pesach each year. It’s very simple to make, yet packs so much sweet and creamy flavor. If you had a bite with your eyes closed, you would think you were eating French Toast.

Honey and Butter Matzah "Sono Tono"

Within 15 minutes, you can have breakfast for 6 with this recipe. All it requires are 6 sheets of matzah, water, honey and butter. Stack the matzah sheets in a Pyrex dish large enough you don’t have to break the matzah. Heat 2 cups of warm water and pour it over the matzah. They should soak for about 5 minutes, long enough to soften them.

While the matzah soaks in water, put 8 ounces of butter and 2/3 cup of honey in a small pot and bring to a slow simmer.

Drain any excess water from the matzah. Slowly pour the honey and butter mixture over and around the matzah. Rotate the dish so the butter and honey soaks into the sides.

Using a sharp knife, cut the matzah into 6 equal portions. Serve them warm. They pair perfectly with hot Moroccan Mint Tea, coffee or fresh squeezed orange juice.

DESCRIPTION

The "Sono-Tono" is a much appreciated breakfast or snack during Passover.

INGREDIENTS
 

  • 6 sheets matzah
  • 2 cups hot water
  • 8 tablespoons butter
  • 2/3 cup honey

INSTRUCTIONS
 

  • In pan, slightly larger than matzot, stack matzot on top of each other. Pour hot water over matzot to soften them. Soak 5 minutes and drain excess water.
  • In small pot, combine honey and butter at low heat until liquified.
  • Drizzle honey and butter mixture on softened matzot. Serve warm.
