DESCRIPTION

INGREDIENTS
 

  • 1 lb meat (diced)
  • 1/2 lb dry chickpeas (pre-soaked)
  • 1/3 cup lentils (rinsed)
  • 1/3 cup dry fava beans
  • 3 stalks celery (diced)
  • 1 bunch cilantro (finely chopped)
  • 1/2 tsp saffron
  • 2 onions (finely chopped )
  • 5 tomatoes (peeled, seeded and diced)
  • 1/3 cup flour
  • 1/3 cup vermicelli
  • 1 lemon (juice only)
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/2 cup olive oil
  • 2 1/2 quarts water
  • 1 cup chilled water

INSTRUCTIONS
 

  • Sauté onions and tomatoes in saucepan. Pour into pot and add chickpeas, lentils, fava beans, celery, cilantro, meat and saffron.
  • Cover with water, and cook at low heat for 1 hour.
  • Dissolve the flour in 1 cup of chilled water. Slowly stir in flour/water mixture into soup. Add lemon juice, salt and pepper.
  • Stir vermicelli into the soup and cook covered at low heat for an additional 15 minutes. Served warm.
