DESCRIPTION

This easy recipe is hard to beat for a quick foolproof dessert. It’s light, fragrant and easy to make.

INGREDIENTS
 

  • 6 large eggs
  • 1-1/3 cups sugar
  • 1 tsp almond extract
  • 1-2/3 cups flour
  • 7/8 cup oil
  • 3/8 cup seltzer water
  • 1 pinch salt
  • 1 tsp vanillin sugar (heaping)
  • 1 tsp baking powder

INSTRUCTIONS
 

  • Preheat oven to 350 degrees.
  • Beat eggs for 10 minutes. 
  • Slowly mix in sugar and then flour.
  • Mix in remaining ingredients.
  • Pour batter into an 18″ loaf pan. Sprinkle with cocoa powder.
  • Bake at 350 degrees for 20 minutes or until golden.
