FISH SHISH KEBAB (BROCHETTES DE POISSON)
DESCRIPTION
INGREDIENTS
- 2 lbs fish fillets (fresh whiting, salmon, seabass, trout, tuna)
- 4 tomatoes
- 4 green peppers
Marinade:
- ½ cup oil
- 2 lemon (juice)
- 1 medium onion (peeled and ground)
- 6 cloves garlic (peeled and crushed)
- 1 bunch parsley (rinsed and minced finely)
- 1 bunch cilantro (rinsed and minced finely)
- ½ teaspoon salt
- ½ teaspoon pepper
- ½ teaspoon cumin
INSTRUCTIONS
- Dice the fillets into 1 inch x 1 inch cubes and set them aside.
- In a bowl, mix together the parsley, cilantro, onion, garlic, oil, lemon juice and spices.
- Marinate the cubes of fish in the sauce for 2 hours, stirring them gently from time to time.
- In the meantime, seed the peppers and tomatoes (unpeeled) and dice them the same size as the fish cubes.
- Prepare the grill.
- Skewer the cubes of fish alternating with the peppers and tomatoes.
- Serve with steamed potatoes and quartered lemons.
