FISH SHISH KEBAB (BROCHETTES DE POISSON)
Ingredients
2
lbs
fish fillets
fresh whiting, salmon, seabass, trout, tuna
4
tomatoes
4
green peppers
Marinade:
1/2
cup
oil
2
lemon
juice
1
medium
onion
peeled and ground
6
cloves
garlic
peeled and crushed
1
bunch
parsley
rinsed and minced finely
1
bunch
cilantro
rinsed and minced finely
1/2
tsp
salt
1/2
tsp
pepper
1/2
tsp
cumin
Instructions
Dice the fillets into 1 inch x 1 inch cubes and set them aside.
In a bowl, mix together the parsley, cilantro, onion, garlic, oil, lemon juice and spices.
Marinate the cubes of fish in the sauce for 2 hours, stirring them gently from time to time.
In the meantime, seed the peppers and tomatoes (unpeeled) and dice them the same size as the fish cubes.
Prepare the grill.
Skewer the cubes of fish alternating with the peppers and tomatoes.
Serve with steamed potatoes and quartered lemons.
