Yes, this White Nougat (Zaban B'luz), is that same nougat that you've eaten in some of today's most popular candy bars.
There are many varieties of nougat. Many candy bars today include different varieties of nougat. Milky Way, Reese's Fast Break, Snickers, Double Decker, ZERO bars, and Baby Ruth bars all have nougat. Whipped nougat is the featured ingredient in the 3 Musketeers bar.
Many legends exist around nougat’s origins. White nougat recipes were found in a Middle Eastern book in Baghdad in the 10th century. One of these recipes indicates that the nougat comes from Harran, a city located between Urfa (now in southeast Turkey) and Aleppo, Syria.
White nougat (Zaban B'luz) is fairly simple to make. Nougat's key ingredients are egg whites, sugar (a lot) and water. The nuts can be optional and are folded into the nougat mixture.
And with that knowledge, you now have the power to create your own candy bars.

DESCRIPTION
INGREDIENTS
- 1 cup almonds (blanched )
- ¾ cup walnuts (or pecans, chopped )
- 7½ cups powdered sugar
- 1½ cup water
- 2 egg whites
- ½ cup sugar
INSTRUCTIONS
- Dissolve powdered sugar in water, while stirring on low heat until thick syrup.
- Remove from heat and allow to cool.
- Whisk egg whites with sugar until thick. Combine this with syrup slowly.
- When the mix hardens, fold nuts into the mixture, pour into the serving bowl, and sprinkle the remaining nuts on top to decorate.

Hello,
Question…it says to pour it into a bowl, but if I want to be able to cut it into squares, should it go into a mold? Will it harden enough to be able to cut? Does it need parchment paper, it looks sticky.

Iris - The syrupy mixture is sticky. I think parchment paper would adhere to the nougat too much. I either would use a glass bowl or even a silicone mold. Another option would be to line a shallow baking dish or tray with edible rice paper. This will prevent the nougat from sticking to the surface. Good luck!
