The Best Strawberry Cake is the perfect dessert recipe during strawberry season. Strawberry season is typically from January to November.
In South Florida we usually have fresh strawberries year round. However, the quality seems much better in early Spring. Since it is strawberry picking season, we took a trip to a local farm and brought home a few pints. Whatever we don't eat or use right away, we freeze for later use.
The Best Strawberry Cake recipe uses a lot of fresh strawberries (though you can use frozen strawberries too) -- almost 2 pints. I puree them for the batter, the icing and then use them fresh for decorating the cake. It's a strawberry fest!
There are also great benefits from these potent little packages. Strawberries protect your heart, increase HDL (good) cholesterol, lower your blood pressure, and guard against cancer.
Strawberries are also packed with vitamins, fiber, and particularly high levels of antioxidants known as polyphenols. They are are a sodium-free, fat-free, cholesterol-free and a low-calorie food.
So, if it weren't for the butter, oil, cream cheese and sugar, this would almost be the perfect dessert for those on diets. Good thing, we all need a cheat-day once in a while.
Creating The Best Strawberry Cake
Kidding aside, the best strawberry cake takes 3 steps to create. The first is the make the batter. The second step is to create the delicious cream-cheese icing. And the final step (optional) is to decorate it.
The batter uses a box of white cake mix, strawberry Jell-O, oil, eggs, flour, water and pureed strawberries. Mix all the ingredients and place into a 9x13 greased Pyrex dish and bake for 45 minutes. The batter starts out pink, but as it bakes, the outer crust turns brown. That is totally fine because the interior of the cake and the icing are pink.
The icing requires powdered sugar, more pureed strawberries, cream cheese and butter. It's guaranteed to satisfy the worst of guilty culinary pleasures.
The final step is decorating the cake. I certainly don't have the creative or artistic talents of great chefs, but I do know how to slice strawberries and "glue" them to a cake. I've found this to be enough to pass muster and impress my guests.
This recipe does take some time and a few ingredients to make. Nothing is complicated and the reward is definitely worthy of the compliments you will receive for one of the most delicious strawberry cake recipes you'll make.

DESCRIPTION
INGREDIENTS
- CAKE:
- 1 box white cake mix
- 3 tbsp. plain flour
- 3 oz. strawberry Jello (1 box)
- ½ cup water
- ¾ cup oil
- 2 cup fresh or frozen pureed strawberries (one cup for cake & one cup for icing)
- 4 eggs
- ICING:
- 1 stick butter softened
- 8 oz. cream cheese (1 package, softened)
- 1 cup frozen or fresh pureed strawberries
- 3 cups powdered sugar
INSTRUCTIONS
- For Cake: Combine cake mix, flour, Jello and water. Add oil and eggs, one at a time, beating well between. Add strawberries. Beat 2 minutes.
- Pour batter into well greased and floured 9×13 pan. Bake at 350* for about 45 minutes.
- For Icing: Add all ingredients to a mixing bowl and mix with mixer until creamy. Pour over cake after it cools from the oven.
- Add a strawberry to top for garnishment or pureed strawberries to top.
