Marzipan Almond Paste Treats were a dessert we looked forward to during the holidays. My grandmother and mom would make the almond paste (marzipan) from scratch.
They would start by peeling and blanching what seemed like pounds of almonds. Then they would carefully process them into a paste. Mom would separate the paste into different sections and grandma would add a few drops of different food colorings to each, representing the fruit it would mimic.
We saved Bing cherry stems throughout the year just so they could clean, dry and store them for the holidays. Of course, the stems were inserted into red balls of marzipan and then rolled in sugar to look like cherries.
The assortment was amazing as was the artwork. They used the marzipan to stuff dates, roll into coconut balls, and shape and flavor to imitate mandarin oranges. Marzipan Almond Paste Treats are as delicious to eat as they are beautiful to see.
The work to peel and blanch dozens of almonds has been made more efficient now with the ability to buy marzipan already made. So you have no excuse to not try making marzipan treats for yourself.

Perla's Marzipan (Almond Paste Treats)
DESCRIPTION
INGREDIENTS
Filling:
- 2 cups almonds (blanched and ground)
- 1 cup sugar
- 1 egg
- 1 lemon (grated peel)
Dough:
- 1 cup oil
- 1 cup water
- ¼ teaspoon salt
- Flour
INSTRUCTIONS
- FillingMix all ingredients and set aside.
- Mix all ingredients together and add flour until dough is firm and doesn't stick Let the dough rest for 30 minutes, roll it thin, then cut circles into it. Oil and flour scallop-edged marzipan molds, fit in the dough circles and fill them with the almond mixture. Bake at 325-350 degrees.
Notes
16 oz almond paste
2 egg yolks
1 whole egg
¼ teaspoon baking powder
Blend all ingredients together, let rest for 10-15 minutes then fill the dough-lined molds.
