Foolproof Sponge Cake
DESCRIPTION
This easy recipe is hard to beat for a quick foolproof dessert. It's light, fragrant and easy to make.
INGREDIENTS
- 6 large eggs
- 1-⅓ cups sugar
- 1 teaspoon almond extract
- 1-⅔ cups flour
- ⅞ cup oil
- ⅜ cup seltzer water
- 1 pinch salt
- 1 teaspoon vanillin sugar (heaping)
- 1 teaspoon baking powder
INSTRUCTIONS
- Preheat oven to 350 degrees.
- Beat eggs for 10 minutes.
- Slowly mix in sugar and then flour.
- Mix in remaining ingredients.
- Pour batter into an 18" loaf pan. Sprinkle with cocoa powder.
- Bake at 350 degrees for 20 minutes or until golden.

Is the oil 7/8 of a cup ?
I guessed and was ok

Yes, though odd, it is 7/8 cup. You could round to 1 cup without adverse affect too. Glad the sponge cake came our great!
