Perla’s Chickpea and Spinach Soup

DESCRIPTION

INGREDIENTS
 

  • 1 lb fresh spinach (rinsed thoroughly)
  • 15 oz chickpeas (canned)
  • 1 clove garlic (peeled)
  • 3 sprigs cilantro (rinsed)
  • 1/2 tsp cumin
  • 1/2 tsp paprika
  • 1 quart water

INSTRUCTIONS
 

  • In a medium pot bring water boil to a boil the liquid. 
  • Strain chickpea liquid from can into the pot.
  • Add in all the ingredients and boil for 5-7 minutes.  
  • *Optional version: Once slightly cooled, use immersion stick blender to blend into a smooth and silky soup.
