DESCRIPTION

A favorite and light soup which can be served as a first course or a stand alone meal.  Add chicken for a heartier meal.

INGREDIENTS
 

  • 2 quarts water
  • 1/2 bunch cilantro (rinsed and minced)
  • 3 large carrots
  • 1 medium onion (Alternative: 1 large leek, sliced)
  • 1 large potato
  • 1/2 tsp turmeric
  • 2 tbs oil
  • 1 tsp salt
  • 1 chicken leg or thigh (optional)

INSTRUCTIONS
 

  • Bring 2 quarts of salted water to a boil.   (Optional: if using chicken, add now and cook until tender, remove, and dice it when cooled.)
  • Add the remaining ingredients (and chicken pieces) to the boiling water and cook for 5 to 10 minutes.
  • Reduce heat to medium-low until the vegetables are tender 20-30 minutes.  Serve warm.  Salt and pepper to taste.
