Inspiration for savory chicken patties with olives
Savory chicken patties with olives is a recipe I concocted because I had to find a way to use some ground chicken I found in the freezer.
As I was cleaning out the freezer, I found a package of ground chicken. My first inclination was to turn it into kabobs. However, that was too simple.
I searched for something that would go with the ground chicken. A search through the refrigerator turned up one egg and a couple of red bell peppers that were on their last leg in the vegetable crisper.
Armed with ground chicken, a can of olives and a couple of red bell peppers, I was ready to go. A well known Moroccan staple is chicken, olive and preserved lemon tagine. This gave me my inspiration.
Getting Started
As the chicken thawed, I placed garlic, parsley, cilantro, salt, pepper, *optional cayenne, and onion into the food processor to make a puree, which would be the flavor base of the chicken. Then I added the ground chicken and one egg (FYI - the chicken did come before the egg). A few pulses later and the ground chicken concoction was ready to form into patties.
In the meantime, I roasted both red bell peppers on the stove top to char the outer skin. It take just a few minutes but really adds depth to the flavor profile of any dish. Once charred, it's very easy to remove the charred outer skin under cool running water. Thinly slice the peppers into strips.
Cooking the savory chicken patties with olives
In a deep frying pan, I added the olive oil and heated it to medium high. As it heated to temperature, I used a large tablespoon and scooped the chicken mixture into the shape of small patties, then placed them on a plate.
Once the oil started to smoke, I carefully placed each patties so they filled the bottom of the pan. Then I fried each side until brown, turning them over once.
Finishing touches
Open and drain the can of olives and spread evenly over the top of the chicken patties. Evenly spread the pepper strips to cover the chicken patties and olives. Cover and simmer on low for 20 minutes.
Remove from the burner and let rest for 5 minutes before serving.
Serve on rice, couscous, noodles, or on their own. Enjoy!
Savory Chicken Patties with Olives
DESCRIPTION
INGREDIENTS
- 1 lb ground chicken
- 2 large red bell peppers (char-grilled, cleaned, seeded and cut into strips)
- ½ medium onion
- 18 oz green olives (or black)
- 1 large egg
- ½ bunch fresh parsley
- ½ bunch cilantro
- 5 tablespoon olive oil (for frying)
- salt (to taste)
- ground black pepper (to taste)
- ground cayenne (to taste)
- 1 cup water (for sauce)
- 1 tablespoon corn starch (for sauce)
INSTRUCTIONS
- Turn a stove top burner on to HIGH and char the outside skin of the peppers until they are evenly black. Remove from burner, let cool for 5 minutes, then rinse off the black skin with cool running water in the sink. Seed and cut into thin strips.
- Peel and cut ½ onion, parsley, cilantro, seasonings, and egg into food processor and puree.
- Add oil to frying pan and heat to med-high.
- Add ground chicken to processor and pulse until all ingredients and mixed.
- Using a large tablespoon, scoop out a heaping of the mixture and shape into a patty. Place on a dish.
- When the oil in the frying pan is hot and start to smoke, carefully place the chicken patties. Fry on each side until golden brown (4-5 minutes per side).
- While the patties are frying, mix 1 cup of water with 1 tablespoon of cornstarch for the sauce.
- Drain the olives and spread them evenly in the pan with the patties.
- Spread the red bell pepper strips evenly across the top of the patties and olives.
- Add the water and cornstarch mixture, cover the pan and bring them to a quick boil.
- Reduce heat and simmer for 20 minutes.
- Let patties rest for 5 minutes then serve as a stand-alone dish or with rice, noodles or couscous.
