Perla’s Sweet Mona Bread (la mona de brioche)

DESCRIPTION

INGREDIENTS
 

  • 6 cups flour
  • 1/2 cup oil
  • 2 eggs
  • 4 tbsp yeast
  • 3/4 cup sugar
  • 2 cups water
  • 1 dash salt
  • 1 tspn lemon zest (optional)

INSTRUCTIONS
 

  • Dilute the yeast in the warm water and let it foam for 15 minutes.
  • In a bowl, mix the flour, salt, sugar, and eggs, and the lemon zest.  Mix well and add to the dough mixture.
  • Knead for 10 minutes.  Then add oil.  Knead until dough ball doesn’t stick to bowl.  
  • Cover bowl with plastic wrap and let sit until dough doubles in size (about 1 hour).
  • Punch down the dough and knead again for 10-15 minutes until soft.  (Sprinkle flour if needed to keep from sticking).  
  • Then form into small balls (the size of an egg) and place into a greased and floured round baking dish.

  • Cover and let rise a second time for 1 hour until the balls double in size and touch each other.

  • Preheat the oven to 350 ° F. 
  • MIX the egg yolk with a tablespoon of milk and gilded the top with a brush, and sprinkle with icing sugar.
  • Bake in preheated oven 20-30 minutes or until Mona has a nice golden color.
