Bessara Fava Beans - Whole, Dip or Soup

DESCRIPTION

INGREDIENTS
 

  • 1 cup dry fava beans
  • 1 tsp paprika
  • 1/2 tsp cumin
  • dash salt to taste
  • 2 tsp olive oil
  • 2 cups water

INSTRUCTIONS
 

  • Pre-soak fava beans overnight or if not possible soak in hot water for about 1 hour. Rinse, slice each bean in two and remove hard shell which you discard.
  • In boiling salted water, add fava beans, paprika, cumin and oil. Reduce heat, simmer until fava bean is tender.
  • Serve warm or cold.

For Dip

  • Drain water and blend in food processor.  Optional, add 1 clove garlic.  Dip should be creamy (similar to hummus).  Spread on plate, garnish with parsley or cilantro and drizzle with olive oil.

For Soup

  • Double spices and add 1 quart of water.  Bring to boil then simmer for 30 minutes.
