Chickpea and Peanut Butter Chocolate Chip Cookies

- Food processor
DESCRIPTION
Healthy, gluten-free and vegan, these cookies are delicious. No eggs, no sugar, and no flour.
INGREDIENTS
- 1¼ cup canned chickpeas (rinsed and drained)
- ½ teaspoon vanilla extract
- ½ cup + 2 tbsp peanut butter
- ¼ cup honey
- ½ teaspoon baking powder
- 8 ounces chocolate chips (optional)
INSTRUCTIONS
- Process all ingredients (except chocolate chips) in a food processor until smooth.
- Mix in chocolate chips.
- Preheat over to 350 degrees.
- Wet hands and form balls. Flatten balls on a cookie sheet 2" apart.
- Bake for 12 minutes. Remove from oven and let cool for 30 minutes before serving.
- Store in container in refrigerator.
