DESCRIPTION

This simple dairy-free cornbread recipe we found on godairyfree.org. It’s heavy on the cornmeal for a rustic vibe and golden hue.

INGREDIENTS
 

Ingredients

  • cups yellow cornmeal (non-GMO )
  • cups all-purpose flour (or whole wheat pastry flour)
  • 6 tablespoons sugar
  • 1 tablespoon baking powder
  • ½ teaspoon baking soda
  • 1 teaspoon salt
  • cups unsweetened dairy-free milk
  • ½ cup corn oil (non-GMO or your baking oil of choice)
  • 2 eggs

INSTRUCTIONS
 

Instructions

  • Preheat your oven to 400ºF and grease an 8×11-inch or 9×9-inch baking dish
  • Place the cornmeal, flour, sugar, baking powder, baking soda, and salt in a large bowl and whisk to combine.
  • In a separate bowl, whisk together the milk beverage, oil, and eggs.
  • Pour the egg mixture into the cornmeal mixture, and stir until just combined. Pour the batter into the prepared baking dish.
  • Bake until the top is golden brown and a toothpick inserted in the center comes out clean, about 25 to 30 minutes.
