Nancy's Dark Chocolate Sorbet

DESCRIPTION

This is an amazingly addictive recipe for dark chocolate sorbet. It's also Kosher for Passover.

INGREDIENTS
 

Ingredients:

  • 1 cup sugar
  • 2/3 cup Dutch-process cocoa
  • 1 pinch of salt
  • 2 teaspoons espresso powder (optional)
  • 1/2 cup semisweet or bittersweet chocolate chips
  • 2 1/4 cups water
  • 1 1/2 teaspoons vanilla extract

INSTRUCTIONS
 

Instructions:

  • Combine the sugar, cocoa, salt, espresso powder, chocolate chips, and water in a saucepan set over medium heat.
  • Bring the mixture to a boil and cook, stirring frequently, until the chips and sugar are dissolved.
  • Remove from the heat, and stir in vanilla. Transfer the mixture to a heatproof bowl (METAL IS BEST), and refrigerate until thoroughly chilled; MIX WHEN IT STARTS TO GET ICY ON THE EDGES, FREEZE overnight.

Notes

THIS MAKES about 3 cups of sorbet. *IF YOU HAVE KOSHER FOR PASSOVER LIQUOR OR VODKA, ADD ABOUT 2 TABLESPOONS, IT HELPS WITH CONSISTENCY.
