This is an amazingly addictive recipe for dark chocolate sorbet. It's also Kosher for Passover.

2/3cupDutch-process cocoa
1pinchof salt
2teaspoonsespresso powderoptional
1/2cupsemisweet or bittersweet chocolate chips
2 1/4cupswater
1 1/2teaspoonsvanilla extract

Combine the sugar, cocoa, salt, espresso powder, chocolate chips, and water in a saucepan set over medium heat.
Bring the mixture to a boil and cook, stirring frequently, until the chips and sugar are dissolved.
Remove from the heat, and stir in vanilla. Transfer the mixture to a heatproof bowl (METAL IS BEST), and refrigerate until thoroughly chilled; MIX WHEN IT STARTS TO GET ICY ON THE EDGES, FREEZE overnight.

THIS MAKES about 3 cups of sorbet. *IF YOU HAVE KOSHER FOR PASSOVER LIQUOR OR VODKA, ADD ABOUT 2 TABLESPOONS, IT HELPS WITH CONSISTENCY.
