DESCRIPTION

An easy and healthy meal. Great for breakfast, lunch or dinner.

INGREDIENTS
 

Ingredients

  • 1 avocado
  • 1 tsp Olive oil
  • 2 whole eggs
  • 1 pinch Kosher salt
  • 1 pinch paprika (and/or black pepper)
  • lime zest (for serving)

INSTRUCTIONS
 

Preparation

  • Halve an avocado and remove the pit.
  • Create two small rings of aluminum foil so the avocado halves stay upright on cookie sheet.
  • Brush with olive oil. Crack an egg into the center of the avocado. Sprinkle with salt and paprika.
  • Broil for 5 minutes. Top with lime zest. Serve.
