DESCRIPTION

Perfect Moroccan mint tea for two.

INGREDIENTS

  • 2 tsp green tea leaf (usually a strong Chinese tea, e.g., gunpowder or Chun Mee)
  • 2 cups water (boiling)
  • 2 sprigs mint leaves (rinsed)
  • 5 tsp sugar

INSTRUCTIONS

  • In a teapot, combine two teaspoons of tea-leaf with 2 cups of boiling water. Allow it to steep for at least 15 minutes.
  • Without stirring, filter the mixture into a stainless steel pot, so that the tea leaves and coarse powder are removed.
  • Add sugar (about 2 1/2 teaspoon per cup).
  • Bring to boil over a medium heat (this helps the sugar dissolve).
  • Fresh mint leaves can be added to the teapot, or directly to the cup.
