Fish skewers

FISH SHISH KEBAB (BROCHETTES DE POISSON)

DESCRIPTION

INGREDIENTS
 

  • 2 lbs fish fillets (fresh whiting, salmon, seabass, trout, tuna)
  • 4 tomatoes
  • 4 green peppers

Marinade:

  • 1/2 cup oil
  • 2 lemon (juice)
  • 1 medium onion (peeled and ground)
  • 6 cloves garlic (peeled and crushed)
  • 1 bunch parsley (rinsed and minced finely)
  • 1 bunch cilantro (rinsed and minced finely)
  • 1/2 tsp salt
  • 1/2 tsp pepper
  • 1/2 tsp cumin

INSTRUCTIONS
 

  • Dice the fillets into 1 inch x 1 inch cubes and set them aside.
  • In a bowl, mix together the parsley, cilantro, onion, garlic, oil, lemon juice and spices.
  • Marinate the cubes of fish in the sauce for 2 hours, stirring them gently from time to time.
  • In the meantime, seed the peppers and tomatoes (unpeeled) and dice them the same size as the fish cubes.
  • Prepare the grill.
  • Skewer the cubes of fish alternating with the peppers and tomatoes.
  • Serve with steamed potatoes and quartered lemons.
