Harira "Silk" Soup with Meat
DESCRIPTION
INGREDIENTS
- 1 lb meat (diced)
- ½ lb dry chickpeas (pre-soaked)
- ⅓ cup lentils (rinsed)
- ⅓ cup dry fava beans
- 3 stalks celery (diced)
- 1 bunch cilantro (finely chopped)
- ½ teaspoon saffron
- 2 onions (finely chopped )
- 5 tomatoes (peeled, seeded and diced)
- ⅓ cup flour
- ⅓ cup vermicelli
- 1 lemon (juice only)
- 1 teaspoon salt
- ½ teaspoon black pepper
- ½ cup olive oil
- 2 ½ quarts water
- 1 cup chilled water
INSTRUCTIONS
- Sauté onions and tomatoes in saucepan. Pour into pot and add chickpeas, lentils, fava beans, celery, cilantro, meat and saffron.
- Cover with water, and cook at low heat for 1 hour.
- Dissolve the flour in 1 cup of chilled water. Slowly stir in flour/water mixture into soup. Add lemon juice, salt and pepper.
- Stir vermicelli into the soup and cook covered at low heat for an additional 15 minutes. Served warm.
