Getting Started
Cilantro Beef Cubes get better and better with slow cooking. For maximum flavor, always sear the cubes in a very hot pot or Dutch oven until they are nice and brown before stewing.
These beef cubes are extremely flavorful and easy to make. They also allow you to utilize a cheaper cut of meat, typically considered grisly and tough, into something that melts in your mouth. The recipe is very simple to make and uses every day ingredients.
Preparation of Beef Cubes
I cut the beef into 1-½" cubes (this makes them more tender). Season the beef cubes by tossing them in a salt, pepper, thyme, garlic powder and onion powder mixture.
Browning the Cubes
In a dutch oven or cast iron pan (preferably) cover the bottom with olive oil. Once the oil heats up enough to start smoking, quickly place the cubes in the pan, stirring them around often to evenly brown them.
Cooking the Beef Cubes
Now, the trick to tenderizing them. Once browned, put the cubes into a pot, add enough water to submerge the beef cubes. Add bay leaves, fresh garlic and soy sauce, cover and bring to a rapid boil for 30 minutes. Reduce heat to low for another 30 minutes and continue to cook. If you need to add water, do so just enough to barely cover the meat again.
At this point, the beef cubes should be tender enough to tear apart with a fork. If not, continue simmering in 15 minute increments until they are tender enough to your liking.
Final touches
Then add the chopped cilantro, mix, cover and simmer for another 15 minutes. Turn off the heat and let the cilantro beef cubes rest for 10-15 minutes.
Now, they are ready to serve on rice, couscous, noodles, or on their own.

DESCRIPTION
INGREDIENTS
- 1 lb beef (cubed)
- 1 bunch cilantro (chopped)
- salt and pepper (to taste)
- 4 tablespoon olive oil (to cover bottom of pan)
- 2 cups water (use enough to submerge beef cubes)
- ¼ cup soy sauce
- 1 teaspoon garlic powder
- 1 tsp onion powder
- ¼ teaspoon ground ginger (optional)
INSTRUCTIONS
- Cube beef chunks into 1-½" squares.
- Add olive oil to pan and bring to high heat.
- Toss beef cubes in garlic powder, thyme, salt, pepper, onion powder mixture.
- When the oil begins to smoke, carefully place the seasoned beef cubes into the pan, stirring frequently to evenly brown meat.
- Add beef cubes, bay leaves and garlic cloves to pot, adding enough water to cover the meat. Cover pot and bring to rapid boil for 30 minutes.
- Reduce heat to low for 30 minutes or more (until beef is tender enough to shred with a fork). Add water if necessary to barely cover most of the beef cubes.
- Add chopped cilantro, stir, cover and continue to simmer for 15 minutes.
- Turn off heat, keep pot on burner for 15 minutes to rest on burner.
- Serve with rice, couscous, noodles, potato, broccoli or on its own. Enjoy!
