Ultimate Chocolate Chip Cookies
DESCRIPTION
This is the Ultimate Chocolate Chip Cookie recipe. My son found this video recipe on Tasty's YouTube recipe site. After testing different flours, fats, chocolates and sugar combination, the following recipe is Tasty's recipe for the Ultimate Chocolate Chip cookie. It is everything it claims to be ... crunchy outside and ooey-gooey inside. This is a definite winner.
INGREDIENTS
- 1 cup bread flour
- ¾ cup all purpose flour
- 2 teaspoon kosher salt
- 1 teaspoon baking soda
- 1 cup butter
- 1 cup dark brown sugar
- ½ cup white sugar
- 2 teaspoon vanilla
- 1 teaspoon espresso powder
- 1 egg
- 1 egg yolk
- ½ cup semi-sweet chocolate chips
- 5 ounces dark chocolate chunks
INSTRUCTIONS
- 1) Sift all the flour, salt and baking soda into a large bowl.
- 2) In sauce pan, bring butter to a boil. Boil for a few minutes while stirring with wooden spoon until butter turns dark brown. Do not burn. Pour butter into a liquid measuring cup. Add enough water to bring the liquefied butter back up to 1 cup. Let it cool off to room temperature.
- 3) In a separate bowl with a hand mixer, cream together dark brown sugar, white sugar, vanilla, espresso powder and butter. Then add egg and egg yolk and continue mixing until well incorporated.
- 4) Add ⅓ of the flour mixture at a time while continuing to mix until all the flour has been added. Then mix in semi-sweet chocolate chips and dark chocolate chunks until incorporated.
- Optional (for best flavor): Chill in refrigerator for 1 hour, or even better, chill overnight.
- 5) Preheat oven to 350 degrees.
- 6) Scoop the cookies onto a parchment paper-lined baking sheet in 3-tablespoon-sized mounds. Evenly space the dough 3 inches apart from one another on a parchment paper-lined baking sheet.
- 7) Bake 12-14 minutes.
- 8) Let cool on baking sheet for 2-3 minutes.
