DESCRIPTION
This is an easy to make and attractive meal in one. Make it with sliced pastrami, roast beef, turkey breast or salami. This cucumber wraps packs in flavor, protein and a nutrients in a satisfying portion.
INGREDIENTS
- 1 large cucumber (peeled into strips)
- 3 oz sliced pastrami (3 slices (opt: turkey, salami, corned beef))
- ½ teaspoon dijon mustard
- ½ teaspoon wasabi sauce
INSTRUCTIONS
- Peel cucumber then using a wide vegetable peeler, peel the cucumber into thin lengthwise slices until you reach the seeds. Then rotate and repeat until all sides have been peeled and only the core of seeds is left.. Discard seeds.
- On a plate, layer the slices of cucumber lengthwise, overlapping each slice. Continue until you have layered the cucumber slices into a rectangular shape.
- Cover the cucumber slices by adding a layer of meat slices.
- Spread the mustard and wasabi sauce over the meat.
- Using a rubber spatula or something flat and thin, slide under one end of the cucumber slices and carefully start to roll it into a wrap.
- Slice diagonally in the middle with a very sharp knife to display interior.
