Perla's Roast
DESCRIPTION
INGREDIENTS
- 3 lb roast
- ½ cup canola oil (vegetable or peanut)
- 1 pinch saffron
- 4 cups water
- 2 tablespoon dry parsley
- 8 whole cloves
- ½ teaspoon nutmeg
- ½ teaspoon pepper
- ½ teaspoon salt
- 4 bay leaves
- 1 tablespoon garlic (granulated or powdered)
INSTRUCTIONS
- In a cast iron or stainless steel skillet, heat oil on high until it starts to smoke. Carefully sear the roast on all sides and both ends, for about 1 minute on each side.
- Transfer the roast and its pan dripping to a large pot. Add the water and the remaining ingredients to the pot, cover and bring to a rapid boil for 10 minutes.
- Reduce the temperature to low and cook for another 45 minutes or until the roast is tender.
- Remove from pot and let roast rest for 10 minutes before serving.
