Mofletta Moroccan Crepes (also spelled Mufleta, Mofleta, Moufleta) is a Maghrebi region Jewish crepe.

Mofletta is one of the signature highlights at any Mimouna Party. This crepe is typically the first “leavened” food Moroccan Jews enjoy immediately following the conclusion of the Passover holiday. Every family has their own recipe.

One of the most fun parts of the Mimouna celebration is “house-hopping.” Not only do we warmly welcome guests and their friends into our homes, but we also go as guests and visit friends’ homes where we partake of their Mofletta and sweets table. It’s a late-night celebration of freedom and brotherly love (read more about Mimouna here).

Mofletta Moroccan Crepes are made from water, flour and oil. The dough is rolled out thinly and cooked in a greased frying pan until it is yellow-brown or golden in color. We eat it warm, usually spread with butter and honey. However, syrup, jams, walnuts, pistachios and dried fruit can also be used.

Mofletta Memories

I have fond memories of watching my Moroccan grandmother Perla making the dough by hand. The tools of the trade were all primitive, yet yielded perfect crepes. Instead of measuring cups and spoons, she used her cupped hands to measure the flour and half egg shells were used to measure the water, oil and remaining ingredients.

Her experienced arthritic hands would knead the dough. Then, she would cut it into equal pieces, oil her hands and roll the pieces into balls. She would use a wooden rolling pin to flatten the dough balls into almost-perfectly round, thin circular crepes. Finally she would carefully place them into a hot, greased cast-iron pan, let them cook for a minute before flipping them over by hand to reveal a golden crust. Our mouths would water in anticipation.

Carrying on the Tradition

My mom has long since taken over and continues to carry on the tradition. Her mofletta is just as great. Our favorite way to eat them is with warm butter and honey drizzled in the middle, then rolled up. They go great with traditional Moroccan Mint Tea.

If you ever have the opportunity to attend a Mimouna party, I highly recommend it. And don’t forget to greet your host with the traditional saying, “Terbeh.”

DESCRIPTION

Grandma Perla’s Moroccan crepes. A tradition served at the end of every Passover at Mimouna.

INGREDIENTS
 

  • 6 cups flour
  • 1 cup water
  • 3 large eggs
  • 1 tsp salt
  • 3 tbsp baking powder
  • 2 tbsp olive oil

INSTRUCTIONS
 

  • Bring greased frying pan to medium heat.
  • In large bowl, combine all the ingredients.  Mix ingredients into light dough and lest rest for 15 minutes.
  • Shape it into small balls. Flatten each ball, stretch it by hand or with a rolling pin to the size of a pancake
  • Place in frying pan for 1-2 minutes on each side, until some golden brown spots show.  Repeat the process, adding a little oil in between each mofletta,  
  • Serve with melted butter and warmed honey.
