Chicken Tagine with Tomato, Honey and Almond Sauce
Equipment
- Tagine or dutch oven or slow cooker
DESCRIPTION
A healthy, tangy and delicious chicken tagine in a deep and rich tomato, honey and almond sauce.
INGREDIENTS
- 1 whole chicken (cut into pieces)
- 6 tomatoes ( chopped )
- 4 tbsp olive oil
- 1 medium onion (finely chopped)
- ½ stick cinnamon
- 1 teaspoon thyme
- 2 cloves garlic ( crushed)
- ½ teaspoon salt
- ⅓ teaspoon black pepper
- 2 tablespoon almonds (toasted, slivered)
- 2 tablespoon honey
INSTRUCTIONS
- Preheat oven to 400 degrees.
- Fry chicken in frying pan with 2 tablespoons of olive oil over medium heat, turning over until golden brown. Remove, place chicken in tagine and set aside.
- Wipe the pan clean with a paper towel and add the remaining 2 tablespoons of olive oil.
- At medium heat, cook the onion and garlic until soft and transparent.
- Add the chopped tomatoes, honey and thyme. Let the sauce boil gently for 5 minutes until it thickens.
- Pour the sauce evenly over the chicken in the tagine. Tuck the cinnamon stick underneath the chicken pieces. Sprinkle with almonds, salt and pepper.
- Put the lid on the tagine and place in the oven. Cook for 40 minutes until the chicken is tender.
Notes
Serve with couscous, rice or bread.
Note: If you don't own a tagine, you can always use a slow cooker, Dutch oven or pot.
