Ingredients

cup
peanut butter
natural creamy or crunchy (or almond butter)
1
cup
coconut sugar
or pure cane sugar

tablespoons
almond milk
room temp

teaspoons
vanilla extract

flour
light spelt, unbleached all-purpose, 1–1 gluten free

teaspoon
baking soda
pinch
mineral salt
only use if peanut butter is unsalted
Instructions
Preheat oven to 350 degrees.
Combine all ingredients into large bowl until thoroughly mixed.
Cover baking sheet with parchment paper.
Form a 2" ball of dough then flatten with a fork. Place on baking sheet with 2" spacing between cookies.
Bake in middle rack of oven for 10-13 minutes until edges are firm.
Let cool then enjoy.
