Stir the sugar and yeast in the water, let stand for 5 minutes, then add to the flour mixture.
Knead the dough until it is soft and elastic. Let rest for 30 minutes.
Remove the challah, shape the dough into circles, set them in greased and floured baking pans and let them raise in a warm place for 30 to 45 minutes.
Preheat oven to 325 degrees.
Bake for 20 minutes or until golden.
Notes
It is a mitzvah (good deed) to dedicate a piece of the dough upon making challah. The golf-size portion is then burned in the bottom of the oven or on the stove top until blackened. The following blessing is recited:Hebrew transliteration: Barukh Ata Hashem Elohenu Melekh ha'olam asher kideshanu bemitzvotav v'tzivanu l'hafrish hallah min a'isah.Translation: Blessed are Thou Eternal our God, King of the universe, Who has hallowed us by Thy commandments and commanded us to separate the hallah from the dough
